- 1/2 cup OO flour (purchase online here) (All purpose flour can be use but it will need to rest longer than the 00 flour)
- 1 teaspoon of Olive oil
- 4 Egg yolks
- 1 Egg
Truffle Sauce:
- 1.5 ounces of Truffle Carpaccio (purchase online here)
- 6 tablespoons of Salted butter
- 1 ounce of Parmesan cheese
Pesto Sauce:
- 2 cups loosely packed fresh basil leaves
- 1/3 cups pine nuts
- 2 medium cloves garlic
- 1/2 grated Parmigiano
- 1/2 cup extra Virginia olive oil
- Salt and pepper to taste
Mise en Place:
- Cutting board
- Tongs
- Kosher salt
- Large pot with lid
- Knife
- Rolling pin
- Strainer
- Plastic wrap
- Large saute pan
- 1/2 cup Measuring cup
- Cheese grater
- Fork
- Food processor or blender (not required, but helpful for the pesto sauce)
